- 4 – ½ inch thick redfish filets
- ¼ cup butter or margarine
- 1 – 6 oz. jar of Cajun Land Brand Blackened Seasoning
- 1 – loaf of New Orleans Style French bread
- 1 medium tomato
- ¼ head of iceberg lettuce
- 1 jar of tartar sauce
Directions
- Divide the loaf of French bread into 4 sections and cut each section in half, longways – toast
- Cut the tomato into thinly cut slices
- Shred the iceberg lettuce
- Spread tartar sauce on both top and bottom portion of French bread
- Heat a cast iron skillet over high heat for at least 10 minutes. WHILE SKILLET IS HEATING UP…
- Melt the butter or margarine, place in shallow bowl
- Dip filets in the butter or margarine; be sure to cover both sides
- Shake Cajun Land Blackened Seasoning liberally on both sides of the filet
- Drop into skillet and cook filets on each side for 45 seconds
- Remove from skillet and place directly on French bread
- Top with lettuce and tomatoes
